Detox Broccoli Cream with Almond

  • 2 tablespoons coconut oil
  • 1/2 cups onion, in medium cubes
  • 1 clove garlic, finely chopped
  • 3 cups Eva® broccoli bits, 454 g
  • 1 cup vegetable broth
  • 2 cups almond milk
  • 1/2 tablespoons cornstarch
  • 2 black peppercorns
  • 1/4 cups cilantro leaves
  • 1 tablespoon coconut oil
  • 1/4 cups almonds, chopped
  • salt
  • almonds, chopped, for decoration
  • olive oil, for decoration
  • chives, finely chopped

  • In a saucepan over medium heat, melt the coconut oil and sauté the onion and garlic until the vegetables become bright in color. Then add the Eva® Broccoli Bits, pour in the vegetable broth, and lower the flame; cook for 6 minutes or until the broth begins to boil. Remove from heat.
  • Blend the previous mixture with almond milk, cornstarch, whole pepper, and cilantro until fully integrated.
  • In a saucepan over low heat, heat the coconut oil and toast the chopped almonds, stirring constantly with a spoon. Once the almonds turn a golden color, pour in the blended mixture that has been strained and add the reserved Eva® Broccoli Bits. Season with salt and cook for 8 minutes over medium-low heat.
  • Serve very hot in a bowl or soup plate. Decorate with chopped almonds, olive oil, and chives.
