In a saucepan over medium heat, melt the coconut oil and sauté the onion and garlic until the vegetables become bright in color. Then add the Eva® Broccoli Bits, pour in the vegetable broth, and lower the flame; cook for 6 minutes or until the broth begins to boil. Remove from heat.
Blend the previous mixture with almond milk, cornstarch, whole pepper, and cilantro until fully integrated.
In a saucepan over low heat, heat the coconut oil and toast the chopped almonds, stirring constantly with a spoon. Once the almonds turn a golden color, pour in the blended mixture that has been strained and add the reserved Eva® Broccoli Bits. Season with salt and cook for 8 minutes over medium-low heat.
Serve very hot in a bowl or soup plate. Decorate with chopped almonds, olive oil, and chives.
