  • 1/2 cups onion, in large pieces, for the broth
  • 1 clove garlic, whole, for the broth
  • 1 1/2 cups tomato, in quarters, for the broth
  • 2 pasilla chiles, without veins or seeds, for the broth
  • 2 guajillo chiles, without veins or seeds, for the broth
  • 2 tortillas
  • 4 cups chicken consommé, for the broth
  • 1 sprig epazote, for the broth
  • salt
  • pepper
  • 2 cups tortillas, in strips, for decoration
  • vegetable oil
  • Oaxaca cheese, shredded, for decoration
  • sour cream, for decoration
  • avocado, in cubes, for decoration
  • pasilla chile, in slices and fried, for decoration
  • pork rinds, in small pieces, for decoration

  • In a pot, place a tablespoon of oil, the onion, the garlic, and the tomato, cook for 5 minutes and add the chiles, the tortilla, the broth, and blend.
  • Return to the heat, add the epazote, salt, pepper, and cook for 15 minutes.
  • In a pot with hot oil, fry the tortillas for 5 minutes or until golden brown over medium heat. Reserve on a plate with absorbent paper.
  • Serve the broth in a soup plate and decorate with fried tortillas, a tablespoon of sour cream, Oaxaca cheese, avocado cubes, chicharrón, and sliced fried chili. Enjoy with a delicious orangeade.
