1 kilo chicken, for the broth
3 tomatoes
1 onion
1 kilo black beans, whole
2 cloves garlic, clean
3 tortillas, cut into juliennes and fried
1 bunch cilantro leaves
1 chipotle chile in adobo sauce
250 grams panela cheese, diced
2 pasilla chiles, fried
cilantro, for decoration

Cook the chicken in a small pot over medium heat, set aside the broth and shred.
Cook the black beans and set aside the broth and beans separately.
In a skillet over low heat, roast the tomatoes and onion. Set aside.
Blend the beans with some of the bean broth and chicken broth, add tomato, onion, garlic, and a chipotle chili, season if necessary. Set aside.
In a pot with a little oil, sauté the soup and bring to a boil, stirring constantly to prevent burning.
Serve with fried julienne-cut tortillas, cubed panela cheese, and fried pasilla chili.
Garnish with fresh cilantro.
