Easy Bean Soup

  • 1 kilo chicken, for the broth
  • 3 tomatoes
  • 1 onion
  • 1 kilo black beans, whole
  • 2 cloves garlic, clean
  • 3 tortillas, cut into juliennes and fried
  • 1 bunch cilantro leaves
  • 1 chipotle chile in adobo sauce
  • 250 grams panela cheese, diced
  • 2 pasilla chiles, fried
  • cilantro, for decoration

  • Cook the chicken in a small pot over medium heat, set aside the broth and shred.
  • Cook the black beans and set aside the broth and beans separately.
  • In a skillet over low heat, roast the tomatoes and onion. Set aside.
  • Blend the beans with some of the bean broth and chicken broth, add tomato, onion, garlic, and a chipotle chili, season if necessary. Set aside.
  • In a pot with a little oil, sauté the soup and bring to a boil, stirring constantly to prevent burning.
  • Serve with fried julienne-cut tortillas, cubed panela cheese, and fried pasilla chili.
  • Garnish with fresh cilantro.
