1 kilo chicken, for the broth
3 tomatoes
1 onion
1 kilo black beans, whole
2 cloves garlic, cleansed
3 tortillas, julienned and fried
1 bunch cilantro leaves
1 chipotle chile in adobo sauce
250 grams panela cheese, diced
2 pasilla chiles, fried
cilantro, to decorate
Preparation

Cook the chicken in a pot over medium heat, reserve the broth and crumble.
Cook the black beans and reserve the broth and beans separately.
On a comal over low heat, roast the tomatoes and onion. Reservation.
Blend the beans with a little of the bean broth and chicken broth, add tomato, onion, garlic and a chipotle pepper, season if necessary. Reservation.
In a pot with a little oil, sauté the soup and bring to a boil while stirring to avoid burning.
Serve with fried julienne tortilla, cubed panela cheese and fried pasilla chili.
Garnish with fresh coriander.
