Easy Bean Soup

  • 1 kilo chicken, for the broth
  • 3 tomatoes
  • 1 onion
  • 1 kilo black beans, whole
  • 2 cloves garlic, cleansed
  • 3 tortillas, julienned and fried
  • 1 bunch cilantro leaves
  • 1 chipotle chile in adobo sauce
  • 250 grams panela cheese, diced
  • 2 pasilla chiles, fried
  • cilantro, to decorate

  • Cook the chicken in a pot over medium heat, reserve the broth and crumble.
  • Cook the black beans and reserve the broth and beans separately.
  • On a comal over low heat, roast the tomatoes and onion. Reservation.
  • Blend the beans with a little of the bean broth and chicken broth, add tomato, onion, garlic and a chipotle pepper, season if necessary. Reservation.
  • In a pot with a little oil, sauté the soup and bring to a boil while stirring to avoid burning.
  • Serve with fried julienne tortilla, cubed panela cheese and fried pasilla chili.
  • Garnish with fresh coriander.
