Prepare this delicious easy bean soup to pamper your whole family. The best thing is that in addition to being a yielding dish, it is an excellent option to make without dairy. Don't miss out on this inexpensive recipe!

Ingredients

6 portions
  • 1 kilo chicken, for the broth
  • 3 tomatoes
  • 1 onion
  • 1 kilo black bean, whole
  • 2 cloves garlic, cleansed
  • 3 tortillas, julienned and fried
  • 1 bunch coriander leave
  • 1 chipotle peppers in adobo sauce
  • 250 grams panela cheese, diced
  • 2 pasilla chili peppers, fried
  • enough coriander, to decorate

Preparation

Cook the chicken in a pot over medium heat, reserve the broth and crumble.
Cook the black beans and reserve the broth and beans separately.
In a comal over low heat, roast the tomatoes and onion. Reservation.
Blend the beans with a little of the bean broth and chicken broth, add tomato, onion, garlic and a chipotle pepper, season if necessary. Reservation.
In a saucepan with a little oil, sauté the soup and bring to a boil while stirring to avoid burning.
Serve with fried julienne tortilla, cubed panela cheese and fried pasilla chili.
Garnish with fresh cilantro.

PRESENTATION

Garnish and accompany with fresh coriander leaves.
