Easy Potato and Leek Soup

  • 2 tablespoons butter
  • 1 cup leek, sliced
  • 2 cups potato, in small cubes
  • 1/2 cups carrot, in small cubes
  • 4 cups chicken broth
  • 1 box Del Fuerte® seasoned tomato sauce, 210 grams
  • salt
  • pepper
  • panela cheese, for decoration
  • parsley, for decoration

  • In a small pot over medium heat, melt the butter, add the leek, and cook for 2 minutes until it slightly changes color, then add the potato and sauté for 5 minutes, then add the carrot and cook for 2 more minutes.
  • Pour in the chicken broth, add the Del Fuerte® seasoned tomato puree, season with salt and pepper, and let the soup cook for 15 minutes.
  • Serve hot and decorate with panela cheese and parsley.
