In a small pot over medium heat, melt the butter, add the leek, and cook for 2 minutes until it slightly changes color, then add the potato and sauté for 5 minutes, then add the carrot and cook for 2 more minutes.
Pour in the chicken broth, add the Del Fuerte® seasoned tomato puree, season with salt and pepper, and let the soup cook for 15 minutes.
Serve hot and decorate with panela cheese and parsley.
