1 tablespoon olive oil
1/4 cups leek, chopped
1/4 cups celery, chopped
1/2 cups carrot, in half-moons
1/2 cups chayote, in small cubes
1 cup chard, in strips
1 cup spinach, in strips
1/2 cups pumpkin, in half-moons
1/2 cups tomato purée, seasoned
2 cups chicken broth
parsley, leaves, for garnish

Cut all the vegetables into medium cubes using a manual cutter.
Add olive oil, leeks, celery, carrots, chayote, Swiss chard, spinach, and zucchini to a pot, cook for 2 minutes.
Add the seasoned tomato puree and chicken broth and cook the soup for 10 minutes.
Serve the vegetable soup hot and garnish with parsley.
