Easy Vegetable Soup

  • 1 tablespoon olive oil
  • 1/4 cups leek, chopped
  • 1/4 cups celery, chopped
  • 1/2 cups carrot, in half-moons
  • 1/2 cups chayote, in small cubes
  • 1 cup chard, in strips
  • 1 cup spinach, in strips
  • 1/2 cups pumpkin, in half-moons
  • 1/2 cups tomato purée, seasoned
  • 2 cups chicken broth
  • parsley, leaves, for garnish

  • Cut all the vegetables into medium cubes using a manual cutter.
  • Add olive oil, leeks, celery, carrots, chayote, Swiss chard, spinach, and zucchini to a pot, cook for 2 minutes.
  • Add the seasoned tomato puree and chicken broth and cook the soup for 10 minutes.
  • Serve the vegetable soup hot and garnish with parsley.
