Four Cheese Cream

An interesting combination of cheeses in a cream that will be a delight to the palate.

  • 1 cup Chihuahua cheese, grated
  • 1 cup roquefort cheese, grated
  • 1 cup Mozzarella cheese, grated
  • 1 cup Gouda cheese, grated
  • 1 can chipotle chile, girl
  • 2 tablespoons corn masa flour
  • 1 liter chicken broth
  • green seedless grapes
  • 2 tablespoons olive oil

  • Mix all the cheeses in a bowl with the flour.
  • This step is optional if you don't want your soup to be spicy, blend a bit of the broth with the chipotle peppers in the blender.
  • If you did the previous step, mix this with the remaining broth.
  • Heat the broth without boiling it; you can add the olive oil here.
  • Reduce to low heat.
  • Add the cheese mixture gradually while stirring the broth continuously.
  • Once all the cheeses are mixed into the broth, we can adjust the flavor by adding salt and pepper.
