Gazpacho

A cold soup based on tomatoes and other vegetables, prepare this delicious gazpacho; this tomato soup is perfect for hot days.

  • 2 red bell peppers, seedless and chopped
  • 8 tomatoes
  • 2 cucumbers, peeled and seedless small ones
  • 2 cloves garlic
  • 1 slice bread
  • 1 teaspoon vinegar
  • 1 onion
  • salt, to taste
  • olive oil

  • Blend the peppers, tomatoes, cucumbers, garlic, bread, oil, vinegar, and salt to taste until you achieve a light cream. You can add water to taste to make the soup less thick.
  • Chill the soup for at least 30 minutes since it should be served very cold.
  • Toast the slices of bread cut into cubes.
  • To prepare the accompaniments, cut and arrange them on different plates (1 tomato, 1 onion, and 1 cucumber).
