Gazpacho with Basil

Recipe of fresh and healthy tomato soup for all occasions. It is a soup that is served cold and is an excellent choice for those hot days when you are looking for refreshing and delicious food. It is very healthy because by not having any method of cooking, the ingredients with which it is prepared retain their benefits at 100%; do not stop trying it.

  • 1 kilo tomato, sliced
  • 1 green bell pepper
  • 6 green onions, chopped
  • 1/2 cucumbers, bare
  • 2 cloves garlic
  • 1 handful basil
  • 50 milliliters olive oil
  • 1 teaspoon sherry vinegar
  • 1 pinch salt
  • 1 pinch pepper

  • For the soup, put all the vegetables, garlic and basil in a food processor and mix until smooth. Pass the mixture through a sieve to remove the pulp and skin of the tomatoes, which should then be thrown away.
  • After rinsing the processor bowl, pour the soup. Mix again, add the olive oil slowly followed by the sherry vinegar, until well blended. Season with salt and pepper to taste.
  • Put in a bowl and chill in the refrigerator until ready to serve.
  • For the garnish, preheat the grill to high.
  • Put the slices of baguette on a baking sheet and sprinkle with olive oil. Season the slices of bread with paprika and salt, toast the bread in the pan 1-2 minutes on both sides or until it is well browned.
  • Serve the soup and slices of baguette floating on it
