Gazpacho with Basil

  • For the soup, place all the vegetables, garlic, and basil in a food processor and blend until smooth. Strain the mixture through a sieve to remove the pulp and skin of the tomatoes, which should then be discarded.
  • After rinsing the food processor bowl, pour in the soup. Blend again, slowly adding the olive oil followed by the sherry vinegar, until well combined. Season with salt and pepper to taste.
  • Place in a container and chill in the refrigerator until ready to serve.
  • For the garnish, preheat the grill to high.
  • Place the baguette slices on a baking sheet and drizzle with olive oil. Season the bread slices with paprika and salt, toast the bread in the pan for 1-2 minutes on both sides or until well browned.
  • Serve the soup with the baguette slices floating on top.
