Goulash Soup

  • 4 tablespoons vegetable oil
  • 1/2 kilos veal, in cubes
  • 2 1/2 cups onion, chopped
  • 2 tablespoons red vinegar
  • 2 tablespoons flour
  • 1 tablespoon paprika
  • 1/4 cups tomato purée
  • 1/2 liters beef broth
  • 2 potatoes, in cubes
  • 1 green bell pepper, chopped
  • 2 chives, chopped
  • 2 cloves garlic
  • 1/2 teaspoons thyme
  • 1/2 teaspoons marjoram
  • 1 leaf bay

  • In a pot, heat oil and add the meat until it starts to brown, about 3 or 4 minutes. Add onions and cook for 8 minutes. Add vinegar and let it reduce for 2 minutes. Add flour and cook, stirring, for 1 minute over medium heat, then add paprika and tomato puree, bell pepper, and cook for 2 or 3 minutes.
  • Add the spices, salt, pepper, and broth, and boil until the meat is tender, about 30 minutes. Add the potatoes and cook for 20 minutes.
  • Adjust the salt and add water if necessary to achieve the desired consistency. Serve in deep plates and garnish with chopped chives.
