Boil water in a deep pot, and once you achieve a high bubble, add the chicken pieces: the leg, thigh, and breast. Add garlic and onion, cover, and cook for 10 minutes over medium heat. Uncover and remove the foam that forms using a skimmer or spoon; this foam is the soluble protein that comes from the meat. Cover again and cook for 10 more minutes.
Once the chicken is about 80% cooked, add the vegetables, starting with the corn and carrot, which are the hardest. Cover and boil for 15 minutes.
Then add the chayote, zucchini, green beans, and season with cilantro and mint. Add salt, cover, and cook for 10 more minutes.
