Cut the onion and leek into julienne strips. Wash and disinfect the cut leek.
Heat a medium-sized, deep pot over medium heat. Pour in olive oil along with 25 g of butter and add garlic, leek, and onion; cook for 7 minutes over low heat, stirring constantly, or until they turn translucent.
Pour in the remaining butter and add salt to prevent browning. Add half a liter of water or vegetable broth to your sautéed mix.
Add two pinches of oregano and black pepper. Let it boil for 10 minutes.
