Bring a liter of water to a boil to cook the lentils, once boiling, add the previously washed lentils along with the gizzards, 1/4 of the onion, and the clove of garlic.
Once cooked, remove the gizzards, chop them into small pieces, and set aside.
In a separate pan, sauté the 1/2 sliced onion, the gizzards in pieces, and the chopped tomato, season with chicken bouillon, and let cook for 2 minutes; then incorporate the gizzards and the sprig of epazote to let simmer with all the ingredients.
When serving, add a touch of flavor with a few drops of lemon and chopped chili
