Lentils with gizzards

  • 500 grams lentils
  • 500 grams gizzard, cleaned
  • 1 liter water
  • 1/4 onions
  • 1 clove garlic
  • 2 serrano chiles, chopped
  • 1 lime
  • 3 tomatoes, chopped
  • 1/2 onions, sliced
  • 1 tablespoon granulated chicken bouillon
  • 1 sprig fresh epazote
  • 1 pinch salt

  • Bring a liter of water to a boil to cook the lentils, once boiling, add the previously washed lentils along with the gizzards, 1/4 of the onion, and the clove of garlic. Once cooked, remove the gizzards, chop them into small pieces, and set aside.
  • In a separate pan, sauté the 1/2 sliced onion, the gizzards in pieces, and the chopped tomato, season with chicken bouillon, and let cook for 2 minutes; then incorporate the gizzards and the sprig of epazote to let simmer with all the ingredients.
  • When serving, add a touch of flavor with a few drops of lemon and chopped chili
