Ingredients: 500 grams lentils; 500 grams gizzard, cleaned; 1 liter water; 1/4 onions; 1 clove garlic; 2 serrano chiles, chopped; 1 lime; 3 tomatoes, chopped; 1/2 onions, sliced; 1 tablespoon granulated chicken bouillon; 1 sprig fresh epazote; 1 pinch salt

Bring a liter of water to a boil to cook the lentils, once boiling, add the previously washed lentils along with the gizzards, 1/4 of the onion, and the clove of garlic. Once cooked, remove the gizzards, chop them into small pieces, and set aside. In a separate pan, sauté the 1/2 sliced onion, the gizzards in pieces, and the chopped tomato, season with chicken bouillon, and let cook for 2 minutes; then incorporate the gizzards and the sprig of epazote to let simmer with all the ingredients.
