Lentils with Plantain

A simple recipe that kids love, delicious lentil soup with plantain.

  • 1 1/2 cups lentils
  • 1 1/2 cups plantain, sliced
  • 1 1/2 onions, girl
  • 250 grams tomato
  • 2 tablespoons vegetable oil
  • water
  • salt

  • In a bowl, soak the lentils, covering them with enough water, and let them rest for 3 hours.
  • Drain the lentils and add them to a pot with enough water, then cook over medium heat for 50 minutes or until soft, adding half an onion and a little salt. Set aside.
  • For the tomato sauce, heat a saucepan with oil over low heat, add the onion and sauté, then add the tomato and season with salt, cover, and let it cook for 15 minutes.
  • Add the plantain and let it cook for 5 minutes. Add the sauce to the pot of lentils, adjust the seasoning, and let it cook for another 5 minutes. Serve and enjoy.
