Light Cauliflower Cream

This recipe is delicious and you can eat it guilt-free; moreover, cauliflower has many antioxidants and is a vegetable that provides numerous health benefits. It is a very light soup that you'll love.

  • 1 cauliflower, in pieces
  • 1 liter water
  • 2 tablespoons chicken broth
  • 2 tablespoons soy sauce
  • 1 teaspoon butter
  • 1 onion

  • Heat the water in the pressure cooker over high heat.
  • When it's boiling, add the cauliflower in pieces and cover. When the pot starts to steam, reduce the heat to low and in 5 to 10 minutes it will be cooked.
  • Blend the cooked cauliflower with a little water (the same water it was cooked in), add the broth, and soy sauce. Set aside.
  • In a saucepan, add the butter and sauté the onion.
  • Add the blended cauliflower and let it boil for 5 minutes. Don't forget to taste the seasoning until it suits your preference.
