Light Clam Chowder

A delicious recipe for Clam Chowder but in a light version so you can enjoy it guilt-free on a cold day.

  • 450 grams canned clam
  • 140 grams bacon, Canadian cut into small cubes
  • 2 tablespoons butter
  • 1 onion
  • 3 potatoes, Medium potatoes peeled and diced
  • 250 grams half & half cream
  • 1 tablespoon thyme
  • 1 tablespoon cayenne pepper
  • 1 tablespoon parsley

  • Drain the canned clams and reserve the juice.
  • In a hot skillet, cook the bacon for 1 to 2 minutes. Add the butter and onion until the onion is soft.
  • Pour in the clam juice and add the potatoes until they are soft, about 10 to 12 minutes.
  • Stir the clams, cream, thyme, pepper, and parsley. Season with salt and pepper.
