Lobster bisque is an elegant cream made from the juices and fragrances of the lobster. This soup is ideal for a lobster night as it only uses the lobster shell but not the meat.

4 lobster bodies without the meat
2 tablespoons butter
1 onion, finely chopped
1 carrot, chopped
1 sprig celery
1 clove garlic
3 tablespoons tomato purée
2 tablespoons brandy
6 cups water
2 cups lobster broth
3 tablespoons flour
pepper, to taste
1 pinch nutmeg
1 cup sour cream

In a large pot, melt the butter over medium heat. Sauté the onion, carrots, and garlic for 5 minutes.
Add the tomato puree and lobster bodies and continue cooking for 5 minutes.
Add the brandy and cook for 5 more minutes.
Add water, lobster stock, and spices and cook until boiling.
Reduce to medium heat and cook the soup for 60 minutes, allowing the broth to thicken.
Strain the soup through a fine sieve and return it to the pot. Continue cooking and gradually incorporate the cream with a whisk. Serve.
