Lobster Bisque

Lobster bisque is an elegant cream made from the juices and fragrances of the lobster. This soup is ideal for a lobster night as it only uses the lobster shell but not the meat.

  • 4 lobster bodies without the meat
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 1 carrot, chopped
  • 1 sprig celery
  • 1 clove garlic
  • 3 tablespoons tomato purée
  • 2 tablespoons brandy
  • 6 cups water
  • 2 cups lobster broth
  • 3 tablespoons flour
  • pepper, to taste
  • 1 pinch nutmeg
  • 1 cup sour cream

  • In a large pot, melt the butter over medium heat. Sauté the onion, carrots, and garlic for 5 minutes.
  • Add the tomato puree and lobster bodies and continue cooking for 5 minutes.
  • Add the brandy and cook for 5 more minutes.
  • Add water, lobster stock, and spices and cook until boiling.
  • Reduce to medium heat and cook the soup for 60 minutes, allowing the broth to thicken.
  • Strain the soup through a fine sieve and return it to the pot. Continue cooking and gradually incorporate the cream with a whisk. Serve.
