Migas

  • Cook the shank with onion, garlic, and salt; once done, separate the meat from the broth and reserve the broth.
  • In a pot, fry the chopped onion and chopped garlic, then add the longaniza and fry until it changes color, then add the broth.
  • When the broth boils, add the bolillo, meat, and chiles.
  • Lightly beat the eggs and add them in a thin stream. Let it boil for 5 minutes.
  • Serve and accompany with lime, piquin chili, and oregano.
