1/4 onions

1 pinch coarse salt
1/4 kilos longaniza
1/2 onions, finely chopped
1 bolillo roll, in pieces
1 clove garlic, finely chopped
2 eggs
2 cascabel chiles
lime, to accompany
piquín chile, to accompany
oregano, to accompany

Cook the shank with onion, garlic, and salt; once done, separate the meat from the broth and reserve the broth.
In a pot, fry the chopped onion and chopped garlic, then add the longaniza and fry until it changes color, then add the broth.
When the broth boils, add the bolillo, meat, and chiles.
Lightly beat the eggs and add them in a thin stream. Let it boil for 5 minutes.
Serve and accompany with lime, piquin chili, and oregano.
