Ingredients

6 portions
  • 3/4 kilos beef, knuckle
  • 1/4 onions
  • 1 garlic
  • 1 pinch sea salt
  • 1/4 kilos longaniza sausage
  • 1/2 onions, finely chopped
  • 1 Mexican french bread roll, in pieces
  • 1 clove garlic, finely chopped
  • 2 eggs
  • 2 cascabel chili peppers
  • to taste lemon, To accompany
  • to taste pequin pepper, To accompany
  • to taste oregano, To accompany

Preparation

Cook the knuckle with onion, garlic and salt; when it is already separated the meat from the broth and reserve the same.
In a saucepan fry the chopped onion and chopped garlic , then add the sausage and let it fry until it changes color, add the broth.
When the broth boils add the bolillo, the meat and the chiles.
Beat the eggs lightly and add them in the form of thread. Boil 5 minutes.
Serve and accompany with lemon, chili pepper and oregano.

TIPS

You can prepare a day before as it grabs better reheated flavor.
