Mushroom Soup

  • 1 kilo button mushrooms, chopped

  • 1/2 cups dry white wine
  • 1 1/2 cups chicken bullion

  • 1 can beef broth
  • 1 sprig celery, chopped
  • 1/2 leeks, chopped up

  • Put the butter in a saucepan with a little bit of oil and sauté the finely chopped onion, leek, and celery. Add the flour and let it cook for a few minutes, then add the mushrooms and let it cook for about 10 minutes.
  • Add the chicken and beef broth and the seasonings (thyme and bay leaf), cover, and let it cook.
  • Finally, add the wine and let it evaporate a bit over medium heat. Add the cream and stir well. Season with salt and pepper.
  • Serve in bowls and garnish with a little chopped parsley and mushrooms in the center.
