Nopal Soup with Guajillo Chile

  • 4 cups nopal
  • water
  • pinches salt
  • 1 teaspoon baking soda
  • 2 tomatoes
  • 1/4 onions
  • 2 cloves garlic
  • 4 guajillo chiles, rehydrated
  • 5 cups chicken broth
  • 1 tablespoon vegetable oil, olive
  • pinches salt
  • 1/2 teaspoons pepper
  • 2 cups button mushrooms, sliced
  • 1/3 cups tomato purée
  • 2 leaves epazote

  • On a cutting board and with the help of a knife, cut the nopales into strips.
  • In a pot with boiling water, cook the nopales with salt and a little baking soda.
  • In a griddle, roast the tomatoes, onion, and garlic. Blend together with the previously rehydrated guajillo, chicken broth, salt, and pepper.
  • In a small pot over medium heat, heat the oil, add the mushrooms, nopales, salt, and pepper. Incorporate the tomato puree and the blended broth, let it boil, and add the epazote; cook for 20 minutes.
  • Serve and accompany with drops of lemon.
