In a pot with boiling water, cook the nopales with salt and a little baking soda.
In a griddle, roast the tomatoes, onion, and garlic. Blend together with the previously rehydrated guajillo, chicken broth, salt, and pepper.
In a small pot over medium heat, heat the oil, add the mushrooms, nopales, salt, and pepper. Incorporate the tomato puree and the blended broth, let it boil, and add the epazote; cook for 20 minutes.
