Nopal Soup with Mushrooms Zeta

  • Chop the nopales and cook them with salt and a wedge of onion in a little water; chop the tomato and mushrooms.
  • Sauté the onion in a little olive oil, and when it becomes transparent, add the tomato and then the mushrooms.
  • Remove the onion peel from the nopales and drain them, rinsing to eliminate the sliminess.
  • Finally, incorporate the nopales, the cups of chicken broth, and when it begins to boil, add the epazote leaves.
  • Let it cook for five more minutes and it's ready!
