Oriental Chicken Soup

  • 1/2 kilos chicken breast, in strips
  • 1 bunch fresh cilantro, chopped
  • chicken broth, natural
  • 250 grams portobello mushroom, or mushrooms
  • 50 grams celery, (1 sprig)
  • 2 cloves garlic, crushed
  • 3 slices ginger, (root)
  • 1/2 teaspoons salt, soy
  • 1/4 tablespoons dried chile, crushed
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame seeds
  • 1 1/2 tablespoons cornstarch
  • 1 tablespoon white vinegar
  • 4 green onions, chopped

  • Boil the chicken with a sprig of cilantro.
  • Once the chicken is cooked, remove it from the broth and set aside.
  • Chop the mushrooms, celery, and garlic.
  • Place the chicken broth, water, mushrooms, celery, ginger, garlic, soy sauce, crushed chiles in a pot and bring to a boil.
  • Once the broth is boiling, reduce the heat and cover.
  • Cook over medium heat while working with the rest of the ingredients.
  • Place the chicken strips in a bowl and stir with a little oil and sesame seeds. Set aside.
  • Mix the cornstarch and vinegar in another bowl and set aside.
  • Increase the pot temperature to medium-high and let it come to a boil again.
  • Add the chicken and let it boil again.
  • Add the cornstarch and vinegar mixture.
  • Cook over medium heat, stirring occasionally until the broth thickens slightly, about 3 minutes.
