Beef and Elbow Soup

The slow cooker is the most underrated appliance in the kitchen, but it is very powerful. Soups made in a slow cooker acquire a depth of flavor that only long cooking times can provide. This is a delicious beef soup that is so hearty you can use it as a main dish.

  • 1 tablespoon olive oil
  • 1 onion, medium, chopped
  • 3 cloves garlic, finely chopped
  • 1/2 kilos ground beef
  • 6 cups beef broth
  • 1 can tomato, peeled
  • 1 can tomato, chopped
  • 1/2 cups ketchup
  • 1 1/2 tablespoons Worcestershire sauce
  • 1 tablespoon italian seasoning
  • 1 package elbow pasta, La Moderna

  • In a skillet, heat the oil. Sauté the onion and garlic, then add the meat, season it, and cook until it's no longer pink.
  • Place the meat in the slow cooker, add the broth and the rest of the ingredients, except for the elbows. Season with salt and pepper to taste.
  • Cover the pot and cook on Low for 8 to 10 hours.
  • When you're ready to serve, you have two options. If you want the elbows to stay fresh, cook them according to the package instructions, and when they're ready, place them on a plate and serve a ladle of soup over them. The other option is to add the elbows to the slow cooker 20 to 25 minutes before serving to let them cook.
