Delicious caprese pasta that is very easy to prepare and healthy. The combination of tomato, cheese, and basil gives it a touch of freshness that is ideal for the hot season.
100 grams fresh Mozzarella cheese, chopped into 1 x 1 cm pieces
2 tomatoes, poached and cut into eighths
6 tablespoons olive oil
3 tablespoons balsamic vinegar
1 teaspoon salt, and pepper
2 liters water
400 grams penne pasta, La Moderna
1/4 onions
1 clove garlic
4 sprigs basil

Mix the cheese, tomato, olive oil, and balsamic vinegar in a large bowl, and season with salt and pepper to taste. Refrigerate while we prepare the pasta.
Heat the water and add the onion, salt, and garlic clove; cook the pasta according to the manufacturer's instructions (10 to 13 minutes). Drain and let cool.
Take out the salad we refrigerated and add the basil leaves and pasta, gently toss.
Serve the pasta and you can add one or two tablespoons of oil with vinegar to each plate.
