Chinese Noodle Soup with Chicken

At home, they love this soup, since instead of using rice noodles, I use wheat spaghetti.

  • 1 package spaghetti, The Modern
  • 1 bunch green onion
  • 1 red bell pepper, or orange
  • 250 grams chicken breast, boiled in 1 liter of water, reserving the broth
  • 1 clove garlic
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 lime, its juice
  • salt, as needed

  • Clean the green onions well and chop them finely. Wash the bell pepper, remove the seeds, and cut it into small cubes.
  • Cut the cooked chicken breast into small pieces. Peel and chop the garlic clove.
  • Heat sesame oil in a saucepan or wok and sauté the green onions, garlic, and bell pepper over high heat for 2 minutes.
  • Lightly season with salt, add the lemon juice, soy sauce, and broth, and bring to a boil. Incorporate the chicken strips and cook covered, letting it reduce to one third.
  • In another pot, boil water with a little salt, add the spaghetti, turn off the heat, cover the pot, and let it steep for about 8 minutes, then turn off and let rest for 4 minutes.
  • Rinse the spaghetti under running water, drain them, and using a fork, add them to the soup with the vegetables and chicken. Serve very hot.
