Easy Vegetable Noodle Soup

Delicious, broth-based noodle soup with vegetables that is very easy to make and everyone will love. To make it a complete meal, you can add some cooked chicken, and it will taste great.

1 cup cauliflower, chopped
1 cup spinach, cleaned and chopped
1 3/4 cups peas and carrots, frozen
1 package fideo pasta, La Moderna
2 liters vegetable broth, or chicken
1 tablespoon vegetable oil
1 tablespoon chipotle chile
1/2 cups tomato purée
salt, and pepper to taste

Bring cauliflower to a boil in chicken or vegetable broth until tender, about 15 minutes.
Add the tomato puree and pasta, and let it boil for 10 minutes.
Add spinach, carrots, and peas, and cook for 10 more minutes.
Add a tablespoon of chipotle, or skip this step if you don't like spicy food.
