Easy Vegetable Noodle Soup

Delicious, broth-based noodle soup with vegetables that is very easy to make and everyone will love. To make it a complete meal, you can add some cooked chicken, and it will taste great.

  • 1 cup cauliflower, chopped
  • 1 cup spinach, cleaned and chopped
  • 1 3/4 cups peas and carrots, frozen
  • 1 package fideo pasta, La Moderna
  • 2 liters vegetable broth, or chicken
  • 1 tablespoon vegetable oil
  • 1 tablespoon chipotle chile
  • 1/2 cups tomato purée
  • salt, and pepper to taste

  • Bring cauliflower to a boil in chicken or vegetable broth until tender, about 15 minutes.
  • Add the tomato puree and pasta, and let it boil for 10 minutes.
  • Add spinach, carrots, and peas, and cook for 10 more minutes.
  • Add a tablespoon of chipotle, or skip this step if you don't like spicy food.
