Elbow Soup with Vegetables

This recipe is delicious and even more so during rainy times as it is a hearty and flavorful soup served hot.

  • 1 package short pasta, La Moderna® elbow
  • 2 red tomatoes
  • 1 clove garlic
  • 2 cups chicken broth
  • 1 tablespoon vegetable oil
  • salt
  • 1 piece onion
  • 1 sprig fresh cilantro, or parsley
  • 1 cup vegetables, cooked

  • Cook the pasta with a piece of onion and a pinch of salt.
  • Blend the red tomatoes with the garlic and onion. Incorporate this mixture into a pot along with the chicken broth, season, and bring to a boil.
  • Add the vegetables to the seasoned broth.
  • Then add the pasta and let it boil for 10 more minutes. Add the sprigs of parsley and cilantro and serve hot.
