  • 1 tablespoon butter
  • 1/4 cups bacon, in small cubes
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups carrot, in small cubes
  • 1/2 cups celery, in small cubes
  • 1/2 cups pumpkin, in small cubes
  • 1 cup tomato, peeled and seeded, diced
  • 3/4 cups tomato paste
  • 5 cups chicken broth
  • 1 cup white bean, white, precooked
  • 3/4 cups Red beans
  • 3/4 cups elbow pasta
  • 1/2 cups peas
  • Parmesan cheese, grated, for garnish
  • baguette, for serving

  • Melt the butter in a pot, add the bacon, and cook for 3 minutes. Next, add the onion and garlic and cook for another 2 minutes or until they turn golden.
  • Add the carrot and celery and cook for 5 minutes. Then add the squash, tomato, tomato paste, and chicken broth and cook for 15 minutes.
  • Incorporate the beans, red beans, elbow macaroni, and peas. Cook the minestrone soup for another 15 minutes or until all ingredients are cooked.
  • Serve the vegetable soup, garnish with parmesan cheese, and accompany with baguette.
