Noodle Soup with Beef Meatballs

Noodle soup is a classic recipe in Mexican home kitchens, and although it is already a delicious dish on its own, in this version accompanied by meatballs that enrich the nutritional value of this dish, it becomes even better. This noodle soup could very well be a complete meal, perfect for dinner or to take as lunch to work.

  • 1/2 kilos ground beef, for the meatballs
  • 1 tablespoon garlic powder, for the meatballs
  • 1 tablespoon onion powder, for the meatballs
  • 1 cup cilantro, finely chopped for the meatballs
  • 1 1/2 cups bacon, fried and chopped, for the meatballs
  • 1 egg, for the meatballs
  • 1/2 cups breadcrumbs, for the meatballs
  • vegetable oil, for the meatballs
  • salt, for the meatballs
  • pepper, for the meatballs
  • 6 tomatoes
  • 1/2 cups tomato purée
  • 1/4 onions
  • 1 clove garlic
  • 2 cups beef broth
  • salt
  • vegetable oil, for browning the noodles
  • 3 cups fideo pasta
  • avocado, to accompany
  • cilantro, for decoration
  • serrano chile, for decoration

  • For the meatballs, mix the ground beef with garlic powder, onion powder, cilantro, bacon, egg, and breadcrumbs; season with salt and pepper. Then, in a skillet over medium heat, heat vegetable oil and sear the meatballs completely for 5 minutes. Set aside.
  • For the noodle broth, blend the tomato with the tomato puree, onion, garlic, and beef broth, add salt. Set aside.
  • For the noodles, heat a pot over medium heat with plenty of oil, then add the noodles and brown them for 5 minutes; if necessary, remove the excess oil. Add the tomato broth you blended and cook for 10 minutes, then add the meatballs and cook for another 10 minutes, approximately, until the texture of the noodles is soft and the meatballs are fully cooked; finally, check the seasoning and add salt if necessary.
  • Garnish with avocado, cilantro, slices of serrano chili, and serve with lime.
