Soup with Meatballs and Chorizo

Noodle soup is always a good option for lunch, but if you add some delicious meatballs and a bit of chorizo, you’ll have a completely different dish. This noodle soup recipe uses turkey chorizo which adds much more flavor, making it perfect for any day of the week.

  • 1/2 onions, for the broth
  • 2 cloves garlic, roasted with skin, and then peeled, for the broth
  • 5 tomatoes, skinless, for the broth
  • 3 liters chicken broth
  • 1/2 kilos ground meat, beef
  • 1/4 teaspoons black pepper, ground
  • 1/4 teaspoons cumin, ground
  • 1/4 teaspoons oregano, ground
  • 1 tablespoon salt
  • 200 grams turkey chorizo ​​Fud®
  • 1 cup fideo pasta
  • 1/2 cups yellow corn kernels
  • 1 cup carrot, cut into cubes
  • 1/2 cups pumpkin, cut into cubes
  • Fud® panela cheese, in cubes, for decoration
  • fresh cilantro, for decoration

  • For the broth, blend the onion with garlic, tomato, and chicken broth. Strain if necessary and set aside.
  • For the meatballs, mix the meat with pepper, cumin, oregano, season with salt, and form small meatballs using your hands. Set aside.
  • Heat a deep saucepan over medium heat, cook the FUD® Turkey Chorizo until golden. Add the noodles and fry until golden. Fill with the broth, let it come to a boil, and add the meatballs.
  • Cover the saucepan and cook until fully cooked. Add the vegetables and cook until softened and they do not lose color.
  • Serve the soup, accompanied by FUD® panela cheese and cilantro.
