Melt the butter in a large pot over medium heat and cook the onion and garlic for 1 minute. Add the chicken broth, the potato, and season with salt. Allow to boil.
Once the soup boils, cover the pot, reduce the heat to low, and cook for 20 minutes or until the potato is well done.
Add the broccoli and parsley and cook for 10 minutes.
With a potato masher or a fork, partially mash the potato. Serve.
