Potato and Broccoli Soup

This delicious soup is a combination of potato and broccoli with a chicken broth base.

  • 1 cup onion, finely chopped white
  • 1 clove garlic
  • 2 tablespoons butter
  • 7 cups chicken broth, homemade or store-bought
  • 4 cups potato, peeled and cut into cubes
  • 6 cups broccoli, chopped
  • 1 pinch salt
  • 1 tablespoon parsley
  • 9 tablespoons Manchego cheese, grated

  • Melt the butter in a large pot over medium heat and cook the onion and garlic for 1 minute. Add the chicken broth, the potato, and season with salt. Allow to boil.
  • Once the soup boils, cover the pot, reduce the heat to low, and cook for 20 minutes or until the potato is well done.
  • Add the broccoli and parsley and cook for 10 minutes.
  • With a potato masher or a fork, partially mash the potato. Serve.
