Pumpkin Soup with Basil

Delicous pumpkin soup with basil, pore, lemon and garlic. A combination of fresh flavors. This soup is a different recipe that brings a new taste experience to your table. A simple dish but perfect for any occasion.

  • 4 zucchinis
  • 1 cup leek, chopped
  • 1 1/2 tablespoons basil, fresh chopped
  • 3 tablespoons olive oil, or melted butter
  • 2 1/2 cups chicken broth
  • 1 teaspoon lime zest
  • 1 clove garlic, finely chopped

  • Cut the zucchini into medium cubes with everything and peel.
  • Sauté all ingredients over high heat in a medium saucepan with oil or butter, except chicken broth. Cook until the pumpkin is soft.
  • Add the broth and allow it to boil for 5 to 10 minutes. Remove from the fire and let report for a few minutes.
  • Pour the soup in the blender, cover with a rag, press and blend the soup.
  • Return to the pot and boil for another 5 minutes. Season with salt and pepper and serve.
