Cut the zucchinis into medium cubes, skin included.
Sauté all the ingredients over high heat in a medium pot with the oil or melted butter, except for the chicken broth. Cook until the zucchini is tender.
Add the broth and allow it to boil for 5 to 10 minutes. Remove from heat and let rest for a few minutes.
Pour the soup into the blender, cover with a cloth, press, and blend the soup.
Return to the pot and boil for another 5 minutes. Season with salt and pepper and serve.
