Ingredients

6 servings
  • 4 pieces of zucchini
  • 1 Cup of leek chopped
  • 1 1/2 spoonfuls of basil fresh chopped
  • 3 spoonfuls of olive oil or melted butter
  • 2 1/2 cups of chicken soup
  • 1 teaspoonful of lemon zest
  • 1 clove of garlic finely chopped

    Preparation

    Cut the zucchini into medium cubes with everything and peel.
    Sauté all ingredients over high heat in a medium saucepan with oil or butter, except chicken broth. Cook until the pumpkin is soft.
    Add the broth and allow it to boil for 5 to 10 minutes. Remove from the fire and let report for a few minutes.
    Pour the soup in the blender, cover with a rag, press and blend the soup.
    Return to the pot and boil for another 5 minutes. Season with salt and pepper and serve.

    PRESENTATION

    You can decorate the soup with pumpkin julienne or bread croutons.

    TIPS

    Always hold the lid of the blender well by liquefying a hot soup to prevent it from exploding.
