In a pot over the heat, pour the two cups of water, the chopped scallion, and the soy sauce. The heat should be medium so that the water boils in a couple of minutes.
Add the meat, cover, and increase the heat for about 10 minutes.
Meanwhile, chop the ham into square pieces. Sauté in a pan with olive oil and soy sauce. Then do the same with the onion and garlic. Cook the noodles in water.
Pour all the sautéed ingredients and the drained noodles into the pot with the broth; mix and cook everything for 5 minutes. Serve.
