Roasted Tomato Soup

Fresh basil and roasted tomato is a combination of irresistible aromas and an exquisite flavor.

  • 4 cloves garlic, unpeeled
  • 1 kilo Roma tomato, In rooms
  • 3 tablespoons olive oil
  • 1 liter chicken broth, hot
  • 1/4 cups basil, fresh chopped
  • 1/2 tablespoons balsamic vinegar

  • Preheat the oven to 190ºC. Place unpeeled garlic and quarters of tomatoes on a baking sheet. Spray the tray with the oil, salt and pepper. Bake for 1 hour.
  • Trim the ends of the garlic and squeeze the interiors in a food processor or in the blender along with the roasted tomatoes and the juice from the baking sheet. Add chicken broth, basil and balsamic vinegar, mix until smooth. Season to taste.
