Roasted Tomato Soup

Fresh basil and roasted tomato is a combination of irresistible aromas and exquisite flavor.

  • 4 cloves garlic, unpeeled
  • 1 kilo Roma tomato, quartered
  • 3 tablespoons olive oil
  • 1 liter chicken broth , hot
  • 1/4 cups basil, fresh chopped
  • 1/2 tablespoons balsamic vinegar

  • Preheat the oven to 190ºC. Place the unpeeled garlic and the tomato quarters cut side up on a baking sheet. Drizzle the sheet with oil, salt, and pepper. Bake for 1 hour.
  • Trim the ends off the garlic and squeeze the insides into a food processor or blender along with the roasted tomatoes and the juice from the baking sheet. Add the chicken broth, basil, and balsamic vinegar, and blend until smooth. Season to taste.
