Shrimp and Octopus Broth

  • 2 liters water
  • 1 kilo octopus, in 2.5 cm pieces
  • 1 tablespoon vegetable oil
  • 1 cup carrot, chopped
  • 2 cups celery, chopped
  • 2 potatoes, diced
  • 1/2 cups pasilla chile, dry and crushed
  • 1/2 cups onion, chopped or to taste
  • 1 cup tomato, chopped
  • 650 grams shrimp, raw (unpeeled)
  • 1 cup ears corn, fresh (optional)

  • Boil water in a large pot over medium-high heat.
  • Add the octopus and let it continue boiling for 20 minutes.
  • While the octopus cooks, heat the oil in a skillet over medium-high heat.
  • Add the carrots, celery, potatoes, and pasilla pepper.
  • Fry for 15 minutes and add the onion and tomato near the end.
  • The ingredients do not need to be fully cooked.
  • Once the octopus has boiled for 20 minutes, add the shrimp and let boil for 5 minutes.
  • Add the skillet vegetables and season with salt to your taste.
  • If you decide to use corn, add it to the pot along with the shrimp.
  • Simmer all the ingredients for 15 minutes.
