  • 50 grams dried shrimp
  • 1 teaspoon olive oil
  • 1 onion
  • 2 Roma tomatoes
  • 1 carrot, chopped
  • 1 potato, chopped
  • 3 cloves
  • 3 black peppercorns
  • 1 kilo shrimp, peeled raw without head
  • 2 cloves garlic
  • 1 chipotle chile, dried
  • 1 tablespoon breadcrumbs
  • 2 liters water

  • Boil 2 liters of water; when it starts boiling, add the olive oil, onion, and dried shrimp. Let it boil for 7 minutes. Strain, keeping the broth, and peel the shrimp.
  • Roast the tomato, garlic, and 1/2 onion. Blend in a blender with 1 dried chipotle pepper. Strain and add to the broth.
  • Place the meat from the dried shrimp, chopped potato, chopped carrot, pepper, clove, and breadcrumbs into the broth. Let it simmer for 10 minutes.
  • Remove the peppers and the clove from the broth, add the raw shrimp, and when it starts boiling again, remove from heat.
