Hot 'n Sour Shrimp Soup

  • 2 liters chicken broth
  • 5 sprigs chives, chopped
  • 4 cloves garlic, chopped
  • 1 teaspoon soy sauce, low sodium
  • 1 teaspoon fish sauce
  • 1 chile, bird's eye chili, seeded and finely chopped
  • 1 teaspoon rice vinegar
  • 1 teaspoon raw sugar
  • 1 leaf lime
  • 1 lime, only the juice
  • 400 grams shrimp, shrimp, previously peeled, washed, and deveined
  • 1 dried árbol chile, seedless
  • 1 pinch salt
  • 1 pinch pepper
  • 2 eggs
  • 1 handful fresh basil leaf
  • Tabasco sauce
  • 1 lime, sliced

  • Bring the chicken broth to a boil in a saucepan, add the scallions, soy sauce, fish sauce, chili, vinegar, muscovado sugar, lime leaves, and lime juice, lower the temperature after boiling and reduce for 5 minutes.
  • Add the shrimp and cook for approximately 5 more minutes until the shrimp turn a consistent orange color.
  • Whisk the two eggs perfectly and add to the hot mixture.
  • Season with salt and pepper.
