Simple Shrimp Broth

If you're craving a tasty shrimp broth, this is the perfect recipe, as it is very simple to prepare. Serve with cilantro and lime, it's the ideal broth to cure a hangover!

  • 2.5 liters water, or vegetable broth
  • 1 1/2 tablespoons olive oil
  • 2 cups potato, peeled and cubed
  • 2 cups carrot, peeled and cubed
  • 2 cups dried shrimp, powder
  • 4 guajillo chiles, seedless and deveined
  • 1/4 onions
  • 2 cloves garlic
  • 3 tomatoes
  • 2 cups water
  • salt and pepper
  • epazote
  • cilantro, cleaned, disinfected, and chopped for serving
  • lime, for serving

  • Place the cubed potatoes and carrots in a pot with a drizzle of olive oil, cooking until they are slightly golden.
  • Place the dried shrimp or dried shrimp powder, guajillo chili, onion, garlic, a leaf of epazote, salt, pepper, and halved tomato in the blender and blend well. You can add a little water or vegetable broth.
  • Pass the mixture through a strainer and add the liquid to the pot where we have the potato and carrot.
  • What remains in the strainer is blended again with more broth to take advantage of all the flavor of the dried shrimp and is passed through the strainer back into our pot with the vegetables.
  • Repeat the previous step 2 more times, until all that is in the blender has been used; once ready, all the solids that were strained will no longer be used.
  • Cook the broth for another 30 minutes, or until it is slightly thickened, with the rest of the epazote leaves. Season with salt and pepper and serve with lime.
