A delicious and very easy recipe to make. Tapioca soup is great when you're sick with a cold due to the amount of garlic it contains. Let's say it's a garlic soup with tapioca.
In a saucepan, bring water to a boil and add the tomatoes, onion, cinnamon, and sugar, boiling until the skins of the tomatoes can be removed.
Once the tomatoes are cooked, remove the skins, and take a blender to add the tomatoes, onion with a little of that water, and blend while uncovering the blender and covering it with a cloth to avoid burns and allow steam to escape.
In another pot, sauté the garlic in a little olive oil until golden brown.
Once the broth is prepared, strain it well and remove the cinnamon stick. Once it starts to boil, add the tapioca and cook over high heat, stirring constantly to prevent it from sticking, until it becomes completely transparent.
On the side, you can toast cubes of bread to make croutons, or buy croutons to accompany the soup. Serve very hot.
