  • 1/4 onions
  • 2 garlic cloves
  • 3 tomatoes, in quarters
  • 2 guajillo chiles, seedless
  • 2 ancho chiles, seedless
  • 2 morita chiles, seedless
  • 4 cups chicken broth
  • 1 sprig epazote
  • salt
  • pepper
  • 2 cups corn tortillas, fried, in strips
  • Manchego cheese, grated
  • sour cream
  • avocado, in cubes
  • pasilla chile, seedless, sliced, and fried
  • pork rinds, in small pieces

  • Sauté the onion, garlic, tomatoes, guajillo chilies, ancho chilies, and morita chilies in a pan with oil for 5 minutes. Blend the sauté with the chicken broth until you achieve a well-integrated broth.
  • Heat the broth, epazote, salt, and pepper in a pot for 15 minutes or until it comes to a boil.
  • Serve the aztec soup and add manchego cheese, sour cream, avocado, pasilla chili, and chicharrón.
