Spinach Light Soup

Rich light spinach soup with skim milk instead of cream.

2 tablespoons olive oil
2 cloves garlic
1/2 onions, medium finely chopped
1 celery
1 potato, medium peeled and dice
2 cups chicken broth
2 cups semi-skimmed milk
1 bag spinach

Preparation

Low
Heat the oil in a pan and season the onion, then the garlic, celery and potatoes for 5 minutes.
Add chicken broth and light milk. Boil and cover for 10 minutes.
Add half of the spinach, cover and boil for 10 minutes.
Cool a little and move to a blender.
Add the rest of the spinach and blend until you achieve the right consistency.
It can be served with slices of lemon.
