Spinach Light Soup

Rich light spinach soup with skim milk instead of cream.

  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1/2 onions, medium finely chopped
  • 1 celery
  • 1 potato, medium peeled and dice
  • 2 cups chicken broth
  • 2 cups semi-skimmed milk
  • 1 bag spinach
  • pepper

  • Heat the oil in a pan and season the onion, then the garlic, celery and potatoes for 5 minutes.
  • Add chicken broth and light milk. Boil and cover for 10 minutes.
  • Add half of the spinach, cover and boil for 10 minutes.
  • Cool a little and move to a blender.
  • Add the rest of the spinach and blend until you achieve the right consistency.
  • It can be served with slices of lemon.
