1 1/2 cups onion, chopped
1 potato, peeled and sliced
4 1/2 cups chicken bullion
3 sprigs chives, chopped
1 bunch spinach, washed and chopped
1/3 cups fresh cilantro
2 tablespoons olive oil
1 garlic

Heat the olive oil and sauté the onion for 8 minutes, add the potatoes and half grated garlic, season for 5 more minutes.
Add the broth and green onion, boil covered for 15 minutes.
Add spinach and cilantro. Boil for 5 minutes. Blend it and adjust the flavor by adding salt and pepper.
It can be served with a little cream on top of each plate.
