Tarascan Soup with Avocado

Tarascan soup is a traditional dish from the state of Michoacán with its rich flavor of chicken and beans, along with the spicy touch from the guajillo; don't hesitate to prepare it for your family.

  • 1 guajillo chile, seedless and soaked in hot water
  • 2 cups black beans, cooked
  • 2 cups water
  • 1 cube Knorr® granulated chicken bouillon
  • 1/4 onions, in pieces
  • 1 clove garlic
  • 1 tablespoon vegetable oil
  • 4 tablespoons sour cream, lower in fat
  • 1 avocado, sliced

  • Blend the guajillo pepper with the beans, water, the Knorr® Suiza Chicken Bouillon cube, onion, and garlic. Strain.
  • Heat the oil in a pot and pour in the blended beans. Cook over medium-high heat, stirring constantly until it comes to a boil.
  • When serving, accompany each plate with cream and slices of avocado.
