1 onion
1 celery
2 cloves garlic, mashed
6 grams black peppercorn, in balls

4 teaspoons parsley, chopped

Bring the chicken to a boil in 2 cups of water; once a layer of white fat forms on top, discard the water and rinse the chicken breasts.
Dice the onion and carrot.
In a large pot, pour in 8 cups of water and add all the vegetables and the chicken, then simmer on low heat for 1.5 hours.
Once the broth is ready, it can be frozen in cubes, and each cube is equivalent to 2 or 3 tablespoons of Swiss koré.
