I present the tomato soup recipe that I have perfected over the years. It is a rich and comforting tomato soup, accompanied by cream, butter, garlic, onion and the stellar ingredient, the delicious tomato.
Melt the butter in a large pot over medium heat and add the oil, mix.
Add the onion and brown for 1 minute, add the garlic and brown all for 2 more minutes.
Add the tomatoes, mashed potatoes, sugar and chicken broth and bring to a boil. When it begins to boil, cover the soup, lower the heat and cook for 30 minutes.
Season with salt and pepper and remove from heat, allow to cool for 10 minutes.
In a blender or a batch of batche meal processor, mix the soup very well. Then pass it through a sieve and return it to the pot.
Add the cream and mix well. Heat the soup and serve.
