Tomato soup

I present the tomato soup recipe that I have perfected over the years. It is a rich and comforting tomato soup, accompanied by cream, butter, garlic, onion and the stellar ingredient, the delicious tomato.

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 1 tablespoon garlic
  • 1 1/2 kilos tomato, chopped
  • 2 tablespoons tomato purée
  • 1 tablespoon sugar
  • 3 cups chicken broth
  • 1/2 cups whole cream
  • basil, to decorate
  • goat cheeses, To accompany

  • Melt the butter in a large pot over medium heat and add the oil, mix.
  • Add the onion and brown for 1 minute, add the garlic and brown all for 2 more minutes.
  • Add the tomatoes, mashed potatoes, sugar and chicken broth and bring to a boil. When it begins to boil, cover the soup, lower the heat and cook for 30 minutes.
  • Season with salt and pepper and remove from heat, allow to cool for 10 minutes.
  • In a blender or a batch of batche meal processor, mix the soup very well. Then pass it through a sieve and return it to the pot.
  • Add the cream and mix well. Heat the soup and serve.
