Traditional Leek and Potato Soup

This leek and potato soup will remind you of mom's cooking. There will be no excuses left for not making a homemade soup like this! Don’t wait any longer and prepare it, it will only take you 25 minutes! As easy as it is delicious.

  • 2 tablespoons butter
  • 1/2 leeks, cut into julienne
  • 2 potatoes, cut into small cubes
  • 8 cups chicken broth
  • 1 sprig thyme
  • 2 leaves bay
  • salt and pepper
  • baguettes, to accompany

  • Melt the butter in a pot over medium heat, add the potatoes, and cook for 10 minutes, stirring constantly and avoiding browning them.
  • Add the leek and cook for 5 more minutes.
  • Pour in the chicken broth, season with salt, pepper, thyme, and bay leaf. Cook for 10 minutes.
  • Serve accompanied by slices of baguette.
