Traditional Leek and Potato Soup

1/2 leeks, cut into julienne
2 potatoes, cut into small cubes
8 cups chicken broth
1 sprig thyme
2 leaves bay
salt and pepper
baguettes, to accompany

Melt the butter in a pot over medium heat, add the potatoes, and cook for 10 minutes, stirring constantly and avoiding browning them.
Add the leek and cook for 5 more minutes.
Pour in the chicken broth, season with salt, pepper, thyme, and bay leaf. Cook for 10 minutes.
Serve accompanied by slices of baguette.
