Traditional Lime Soup

Lime soup is a typical dish of Yucatecan cuisine, this soup is delicious because it is a seasoned chicken broth spiced with cloves, Yucatecan oregano, and cumin. This broth is fried in lard with the chicken, tomato, onion, and sweet yellow pepper or Xcat-ik, the most delicious part is that it is flavored with slices of lime that give it a spectacular taste and is accompanied by strips of fried tortillas.

  • 1 chicken breast, for the broth
  • 3 liters water, for the broth
  • 1/4 onions, for the broth
  • 2 cloves garlic, for the broth
  • 1/4 bunches fresh cilantro, for the broth
  • 1 tablespoon salt, for the broth
  • 2 tablespoons lard, for broth and frying
  • 3 tomatoes, peeled and seeded, cut into small cubes
  • 1/2 onions, cut into small cubes
  • 2 güero chiles, or Xcat-ic, cut into medium cubes
  • 1 pinch cumin, toasted on the griddle and ground
  • 1 clove, toasted on the griddle and ground
  • 1 teaspoon oregano, toasted on the griddle and ground
  • 1 pinch salt
  • 1 cup lime, Yucatecan, cut into slices
  • 1 cup tortillas, fried, cut into thin strips

  • Add the ingredients for the broth to a pot, cover, and cook for 35 minutes, seasoning to your taste.
  • Remove the chicken breast, shred it finely, and reserve the broth.
  • In a small pot, add the lard and fry the tomato, chicken, onion, and Xcat-ic pepper, fill with the reserved broth, add the spices, season with salt and pepper, cook until it reaches a boil, add the limes a few minutes before to prevent bitterness.
  • Serve the broth with the chicken and fried tortilla. Enjoy.
